Either my English is not good enough or I just do not get it, but could anybody please explain to me what the "accent color" is and where it is used?
My question originated from the fact that I couldn't find a real description of when and how that color is used. Had I scrolled further down, I'd have found that description, too.

Use the 60-30-10 rule when painting or decorating a room: 60 percent should be a neutral color, 30 percent applied to a second color and 10 percent reserved for the accent color. Match an accent color with the room – Colors convey a certain energy and feel.
Blue is a great choice for an accent wall because it adds a soothing element to the room. Sherwin-Williams Searching Blue is a bold medium blue with cool undertones and is the perfect boost of color for your feature wall.
The main accent color would be white, as there is a lot of it in the curtains, the trim, on the entrance and closet doors, and also in the bedding and accessories. Then the last accent would be that happy, bright green.
Accent ColorA color that is complementary to the main color of the home, such as a red door against green stucco, will distinguish the home from others, highlight the main entry and create visual interest by increasing a home's curb appeal.
You got good example in Material Design docs -> your palettes are shown in section "UI color application" - with blue colors being primary and pink being used for accents.
