I've recently uploaded an update for one of my iPhone apps, but I didn't update the screenshots. It has now dawned on me that they are old screens for the new game, which might be confusing for users.
Is there anyway to upload the new screenshots without submitting a new binary?

It sounds as if you are holding the shutter button too long - long enough to be taking burst shots. Very quickly depress the home and on/off buttons together and release. Holding down the Home and Sleep/Wake buttons forces the phone to turn off, and doesn't affect how many screenshots are being taken.
Launch Tailor and give it permission to access your photos. The app will automatically find any sequential screenshots and stitch them together in seconds. Tap the share button that appears or swipe right to see other screenshots Tailor has found.
On the iOS App Store, you must provide a set of screenshots for all device types. For iPhone, at the minimum, you need one set of screenshots for the 5.5-inch display, and for iPad, you need at least one set for the 12.9-inch display.
Seems like Apple can't make up their mind what they want to allow. Originally, you couldn't and then they changed it to allow you to change them and now you can't change them anymore.
Here's the relevant section of the documentation:
Important: Screenshots are locked for all apps except Newsstand apps. Newsstand apps are able to change their screenshots without creating a new version of the app.
