I have created an Emulator using android 7.1.1 (API 25) CPU X86. When I start the emulator its showing pixel launcher keeps stopping
issue. I have checked with CPU x86_64 also but same issue.

There are more than 50 alternatives to Pixel Launcher for Android, Android Tablet, F-Droid, Kindle Fire and Android SDK. The best alternative is Lawnchair, which is both free and Open Source. Other great apps like Pixel Launcher are KISS Launcher, Trebuchet, Microsoft Launcher and Smart Launcher.
With prior Android interfaces, access to Google Now was available just a swipe away – and that continues, but the Pixel Launcher also features a tab labeled “G” which allows you to tap into the power of the Google Assistant.
Go to home screen, tap and hold the space until you get a pop-up screen. Following that, you will get three options i.e. Wallpapers, Widgets, and Settings. Just tap on the Settings button to make any change in the Pixel launcher interface.
Google's Pixel Launcher has now been made available for all Android devices running Android 5.0 and above, which is available on Google Play Store.
Selecting emulated performance --> graphics:Software-GLES 2.0 option in AVD setting.Solves my problem.

It seems like the issue is solved in Android Studio 2.2.3. If for some reason you still see this problem, the solution below works.

I found a reasonable solution for now. The problem is mainly in the launcher, not the emulator itself. So installing a different launcher can fix the issue. I installed the GO launcher from here: http://www.appsapk.com/go-launcher-ex/
Just drag and drop the apk on the emulator and install it, then tell the OS to use it as default.
I am not sure if this specific apk is a legal copy of the apk, but anyway it solves the issue for me and there are many launchers out there
