I wish to create a summary variables about the activity. So far I have:

After these variables, I also want a list of the areas each activity takes place in.
I would normally use:
unique(unlist(bout$area, use.names = FALSE))
But I am wondering how I would also report the proportion of time spent in each of these areas? Ideally I would want this integrated into the function above. There should never be anymore than 10 areas for each activity (so I am happy with blanks when fewer areas are listed).
For example (showing only two areas):
bout area.1 time.area.1 area.2 time.area.2
2 E457 0.80 E460 0.20
3 E465 0.50 E463 0.33
Any ideas would be very much appreciated.
For what you are looking to do, the matrix above with blanks is a fairly clunky style, and hard(er) to create. The following might be more useful (and captures the same information).
Setup Data:
bout$StartTime <- times(as.character(bout$Time))
bout$EndTime <- bout$StartTime + times("00:00:10")
Aggregate
library(data.table)
bout.result <- setDT(bout)[order(bout), list(Date = min(Date), Dur = max(Time) - min(Time)), by = c("bout","area")]
This will give you the the duration of each unique bout, identified by bout and area. I've also replicated your min(Date) notation. If there are more than 10 areas/bout, you can easily just add more rows.
Proportion:
boutPro <- bout.result[, list(boutDur = times(sum(Dur))), by = "bout"]
bout.result <- merge(bout.result,boutPro, by = "bout")
