GitHub is the entire site. Gists are a particular service offered on that site, namely code snippets akin to pastebin. However, everything is driven by git revision control, so gists also have complete revision histories.
Share code with GitHub gists Gists let you share code snippets, entire files, or even applications. You can also use gists to save and share console output when running, debugging, or testing your code. Each gist is a repository that can be cloned or forked by other people.
Since gists are Git repositories, you can view their full commit history, complete with diffs. You can also fork or clone gists. For more information, see "Forking and cloning gists". You can download a ZIP file of a gist by clicking the Download ZIP button at the top of the gist.

The killer feature of github's gists in my opinion is their Git integration. You can clone your gists, version control them etc.
If you need just need something to collaborate, you can choose one of the open source pastebins and make an install locally inside your intranet. One that comes to mind is dpaste.
