I'm new to HTML codes in general. I'm trying to create an HTML email using this template. Things are working fine except for one thing: the email colors are changing when my phone is on dark mode. How can I disable that?

Target Dark Mode users. If you feel comfortable digging into the CSS of your email, then adding in your own Dark Mode overrides will help you control how your email is viewed. Well, mostly. The Gmail App (iOS and Android) as well as Outlook 2019 (Windows) will ignore these styles.
What does dark mode for email do? It's not always just the email application's user interface that switches when dark mode is turned on. Email clients may switch the look of the entire message as well. Dark mode shifts the background and font colors of an email to light on dark.
No color changes Some email clients let you change their UI to Dark Mode, but that doesn't have any impact on how your HTML email is rendered. Whether the app is set to Light or Dark Mode, your email will look exactly the same.
Many people desire to have their phones or computers in a dark mode/theme for readability, battery-saving, and/or reduced eye strain. You should not seek to remove this.
Furthermore, the current landscape of email clients is such that you cannot necessarily control this.
Specifically, we cannot change Outlook 2019 (Windows) or Gmail.
