When setting up a server, I noticed that the environment variable process.env.PORT is used. Are there any other variables like this? Where can I see all of them?

One way of setting the environment variables on Heroku is to use the web interface. The first step is to log into your account and go to the Heroku dashboard. Figure 1 illustrates my dashboard. Choose the application for which you want to set the environment variables.

IMO both – environment variables and config files – are secure as long you can trust everyone that has access to your servers and you carefully reviewed the source code of all libraries and gems you have bundled with your app.
The following command will display all of the environment variables, not just those visible from heroku config
