How to simulate location in Simulator. To simulate location on a Simulator, select Features menu > Location, then you will see a list of location and movement options you can simulate.
click on each available network interface in the list at the left of the window in turn, disabling each one. click on the Configure iPv4 menu, and choose Off. for Wi-Fi, just click on the Turn Wi-Fi Off button. click Apply, and this location will block all network activity.
The simulator does a really lousy job of indicating app performance. In fact it doesn't try. For most things the simulator is much, much faster than an iOS device. It runs your code on an x86 processor, which is much faster than the ARM and has many times more memory.
When in the simulator, hold the option key down and click - this will simulate a two-finger tap!
Turn off your network connection on the Mac.
You could install Apple's Network Link Conditioner
On Yosemite:
Network Link Conditioner can be found in the "Hardware IO Tools for Xcode" package. This can be downloaded from the Apple Developer Downloads page. Once the download has finished, open the DMG and double-click "Network Link Condition.prefPane" to install (source).
With this preferences panel you could create a profile with 0kbps speed.
On older versions of OSX:
Mountain Lion / Mavericks: Xcode > Open Developer Tool > More Developer Tools
Lion: /Developer/Applications/Utilities/Network Link Conditioner
