I wonder what rules there are to sell physical products in an iOS app? The payment is not going to be using apples in-app purchase.

No. When apps are removed from the App Store, they're not deleted from your account. Your app name will continue to be associated with your app.
Apple does not take a cut from these transactions (that you're subject to), however you are paying around 2-3% in credit card fees per transaction, but that's common for accepting money anywhere.
Apple confirms it runs ads for third-party apps, regularly communicates with developers about it. Earlier today, a report suggested that Apple has been “secretly” buying ads for third-party applications in an effort to increase its commission earnings.
Once you've made an app that you think you can sell on the app store log into your apple developer account and register for their paid developer program. This will cost 99 dollars a year and will allow you to sell apps on the app store. Fill out their form carefully and follow the instructions.
