Does anyone know where the option to print an infopath form (in my case a customized list form) exists in SharePoint 2010?
In MOSS this functionality comes out of the box but either I am missing something really simple or my environment isn't set up properly.
Does anyone have any suggestions they can offer?

Go to "List Settings" > "Advanced Settings" and enable the "Dialog" option. You can see the Print button there too. The print() method prints the contents of the current window. In this article we explored a scenario of showing a Print button on InfoPath forms.
Hover over the desired form, bring up the edit drop-down and use "Send to > Download a copy". That will download the form template, or . xsn, which you can design with InfoPath Designer or do whatever else you please.
Open SharePoint Designer 2010, click Open Site, and open the web that contains the list in question. Click Lists and Libraries on the left, and click on the List that you want to add the print button. On the ribbon under List Settings, click Custom Action –> Display Form Ribbon. Fill out the Custom Action screen.
Open your form in InfoPath Designer and go to File -> Print. Select novaPDF from the list of printers and click OK. In the "Save PDF File As" window, fill in the path where you want to save the PDF file, select After save actions or Merging options if needed and click OK to start the conversion.
This functionality is also built into SP2010 / Infopath 2010. However there is no way to configure it within Sharepoint - but only in InfoPath.
In Infopath under File > Info > Form Options you have several possibilities to restrict users from doing stuff with your form. To get the print functionality you need to enable the InfoPath Ribbon ("Show InfoPath commands in Ribbon or toolbar" and also the Print Preview option and you are good to go. See the below image for the correct settings in the dialog:
