I tend towards darker color schemes when building GUIs, and some of the nicer screenshots that I've seen of Kibana support this. Now that we are kicking the tires on Kibana 4, the vizualizations and dashboards seem to be light background only. Is there a button staring me in the face that I'm missing, or is the color picking not (yet) available in version 4?
To do this, we can click on the legend. This will open the color palette so that we can choose a color: In the previous screen, we want to change the green color, so from the color palette, we can click the yellow color to change the green bar to a yellow bar: This way, we can change the colors of visualizations.
The color of the pie chart can be changed by clicking directly on the color of each slice on the right side of the chart.
You can build your dashboard by adding visualizations. By default, Kibana dashboards use a light color theme. To use a dark color theme, click on the “Settings” button and check the “Use Dark Theme” box. To add a visualization to the dashboard, click the “Add Visualization” button in the toolbar panel.

UPD: Dark scheme was merged (https://github.com/elastic/kibana/pull/4702) and available in Kibana 4.2
