What does it mean when an email address has apostrophe?

This issue occurred because the message was sent using the UTF-8 character set, which the receiving email system doesn't support. To fix this, the sender can try sending the message using a different, supported character set.

Can there be 2 symbols in an email address?

As far as I'm aware, you can only have one. The @ symbol is the delimiter between the domain name and the address name; multiple @ symbols would very likely confuse the email parser.

Can email addresses have in them?

The local-part of the email address may use any of these ASCII characters: uppercase and lowercase Latin letters A to Z and a to z ; digits 0 to 9 ; special characters !

Yes, according to RFC 3696 apostrophes are valid as long as they come before the @ symbol.
