In latest version of Android Studio android monitor was changed to android profiler. Android profiler it's great but I don't see any option to take a screenshots or record device screen. So my question is where are now capturing options?

Most recent Android devices have standardized the screenshot action to pressing the Power and Volume Down buttons simultaneously. Others may have you press down on the Power button, then select Screenshot from the menu.
You can simply press the shortcut key i.e. ctlr + S to take screenshot in the emulator. Also there is a button given on the emulator to take the screenshot. Simply press this button button and you'll have a screenshot of the emulator.
Open the screen that you want to capture. Press the Power and Volume down buttons at the same time. At the bottom, tap Capture more. To select the content you want to capture, use the crop guidelines.
You can still access them through the LogCat tab.
